 We got this recipe from Half Baked Harvest. It's one of our favorite recipes because it's so easy to make and it tastes delicious! Of course we had to put our own spin on it and make it spicy. We wanted to share with you below our version of Half Baked Harvest's oven baked cajun popcorn chicken with creamy honey mustard.

A popular dish served in fast food restaurants, popcorn chicken consists of a bite-sized chicken piece, either from chicken breast or chicken thigh, of battered fried chicken that is served with a variety of dipping sauces. It's like chicken nuggets but healthier and tastier, especially if it's easy and homemade oven baked chicken.

To make your own Cajun breaded popcorn chicken bites at home, you will need to first prepare the ingredients required for the marinade and coating. We aren't using breadcrumbs, although Panko bread crumb can be substituted for the corn flakes if necessary.

2 Pounds of boneless chicken breasts, cut into 2 inch cubes

1/2 Cup of buttermilk

2 Cup of corn flakes finely crushed

2 TBSP whole wheat, all-purpose, or gluten free flour

2 TBSP cajun seasoning

1/2 Cup of finely shredded sharp cheddar cheese

Black pepper

Extra virgin olive oil for brushing

Revved Up Spicy Cayenne Hot Sauce



1/4 Cup Dijon Mustard

1/4 Cup of Honey

1/4 Cup of Sour Cream or Plain Greek Yogurt

2 TBSP Extra Virgin Olive Oil

Juice of 1/2 a Lemon

3 TSP of Revved Up Spicy Cayenne Hot Sauce

(adjust to your taste)

Easy Oven Baked Chicken Breast Recipe You're Going To Love- Honey Mustard Dipping Sauce with Hot Sauce


  1. Add the chicken to a gallon size zip top bag. Pour the buttermilk over the chicken, toss to coat and let sit 30 minutes.

  2. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.

  3. Add the corn flake crumbs, flour, cajun seasoning, cheddar, and a pinch of pepper to a medium-sized bowl. Stir to combine.

  4. Remove each the chicken bites from the buttermilk, and dredge through the crumbs / flour mixture, pressing gently to adhere. Place on the prepared baking sheet. Repeat until all the chicken has been used.

  5. Mix olive oil with Revved Up Spicy Cayenne (to taste) and brush over chicken bites.

  6. Transfer to the oven in a baking dish / baking sheet and bake for 15-20 minutes or until the popcorn chicken is cooked through.

Honey Mustard Dipping Sauce

Mix all ingredients and stir until smooth. Drizzle over the top of cooked popcorn chicken bites or serve along side as a dipping sauce.

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • Pinch of salt
